My mom's old fashioned beef & noodles is pure comfort food, my friends!
Sue's Minestrone
About 20 minutes before the stew is done, bring a large pot of salted water to a boil and cook the egg noodles until al dente, about 7 minutes.
Recipe Summary Sue's Minestrone
This is a good make-ahead recipe. In fact, I usually let it sit in the fridge for a few days before I reheat it! Feel free to experiment with the mixed vegetables. I use the Italian-style mixed veggies. Serve with warmed foccacia or French bread for dipping.Ingredients | Beef Stew Egg Noodle Soup
